Ingredients (for 2 people):

  • 2 fresh sea bream fillets
  • 4 tablespoons Romano extra virgin olive oil
  • 1 untreated lemon (juice and zest)
  • Fresh parsley
  • A pinch of coarse sea salt
  • Whole black peppercorns
  • Seasonal vegetables (zucchini, Swiss chard, new potatoes) 

Preparation:

  1. Lightly salt the sea bream fillets and let them rest at room temperature for 15 minutes.
  2. In a pan with a few drops of Romano oil, briefly sear the fillets on both sides (about 2–3 minutes).
  3. In a small bowl, whisk together olive oil, lemon juice, grated lemon zest, finely chopped parsley, and freshly ground pepper to create a light emulsion.
  4. Steam the vegetables and drizzle them with the remaining emulsion.
  5. Serve the sea bream fillet on a bed of vegetables, topped with the aromatic emulsion.

Radicchio Trevigiano x Chiavalon Extra Virgin Olive Oil

Radicchio Trevigiano, a chicory variant from the Treviso region of Italy, is known for its distinctive bitter flavor and vibrant color. Paired with olive oil this dish offers a delightful balance of flavors. Perfect as a side dish or a light meal, this recipe is simple yet elegant, embodying the essence of Italian cuisine.

Ingredients:

  • 2 heads of Radicchio Trevigiano
  • 3 tablespoons Chiavalon Extra Virgin Olive Oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: Garlic, balsamic vinegar, or lemon juice
  • Optional: Shaved Parmesan cheese or pine nuts for garnish

Instructions:

Begin by washing the Radicchio thoroughly under cold water. Pat dry with a clean kitchen towel. Cut each head of radicchio in half lengthwise. If the heads are large, you may cut them into quarters.

Then heat a large skillet over medium heat. Add our Organic EVOO and warm it gently. If you want, now you can add the sliced garlic to the skillet. Sauté for about 1 minute or until it becomes fragrant, but be careful not to burn it. Place the radicchio cut side down in the skillet. Cook for about 3-4 minutes or until it begins to wilt and char slightly.

Seasoning:

Season the radicchio with salt and freshly ground black pepper. Flip the radicchio over and cook for an additional 2-3 minutes. For a touch of acidity, you can add a splash of balsamic vinegar or a squeeze of lemon juice over the radicchio during the last minute of cooking.

Transfer the cooked radicchio onto a serving dish. Drizzle with a little more Chiavalon Extra Virgin Olive Oil if desired.

If you want a twist, garnish with shaved Parmesan cheese or toasted pine nuts for added texture and flavor.

Summer is still in full swing, the high temperatures don’t let up and we bring you an idea how to put together a colorful and healthy table for your friends without much hassle and high temperatures in the kitchen. The preparation will take some time, but you can then enjoy it with your friends without worry.

Although tapas are a traditional Spanish dish, they are loved by all. Simple and delicate snacks that go irresistibly with a glass of champagne, wine or gin and tonic… and we bring them to you with the Chiavalon twist!

Here are 5 easy ideas for light snacks that will suit any taste:

  1. STUFFED TOMATOES WITH GOAT SKUTA

Cut the top off the tomato and hollow it out, put the meet in a bowl and mix with the skuta pieces, finely chopped garlic, capers and season with salt, pepper and olive oil and then fill the tomato with it. Cover with the top, oil with olive oil and bake in the oven for 20 minutes at 180 degrees.

  1. ALLA PARMIGIANA EGGPLANTS IN TOMATO SALSA

Cut the eggplants lengthwise into thin strips and soften in a pan in olive oil for a few minutes. Then place the mozzarella on top, add a little salt and steam and roll. Na dno posude stavite malo šalše, posložite rolice i polijte ih šalšom, maslinovim uljem i naribajte malo parmezana preko. Put some salsa on the bottom of the pan, arrange the rolls and rub the salsa, olive oil and some parmesan on top. Put in the oven and bake at 180 °C for about 30 minutes.

PS looks especially nice when placed in small ceramic pots and portioned.

  1. TRIO BRUSCHETTA:

Base: arrange slices of bread on a baking sheet and bake in the oven for a bit until a crust is formed. Then rub with garlic and drizzle with olive oil and then we put together a story.

SALSA, ONIONS AND ANCHOVY

Put a spoonful of salsa, some onion jam and a few pieces of grated anchovies and capers on the seasoned bread and drizzle again with olive oil and put in the oven for a few more minutes.

The onion jam is made by cutting the purple onion into half moons, salting it and lightly frying it in olive oil while stirring. When the liquid has evaporated, add brown sugar and a little honey, red wine and balsamic and cook until it thickens or evaporates.

CHEESE AND FRUIT

Put cottage cheese or mozzarella on the seasoned bread, drizzle with thick balsamic vinegar and top with either peaches lightly roasted in olive oil in a pan or roasted pineapple with pepper or serve with fresh berries – whichever you prefer. You can always season it to your liking, we just like to pour olive oil on top.

OLIVES, BACON AND MINT

Put black olives, thyme, basil, some salt and pepper in a blender and mix everything. Fry the thinly sliced bacon on the side of the pan until it is crispy like chips and then chop. Spread the pate on the bruschetta, sprinkle with bacon and mint leaves… and drizzle a little olive oil on top.

  1. ZUCCHINI CARPACCIO WITH PARMESAN LEAVES

Cut the zucchini in very thin slices, salt them and let them rest for a while on a paper support or cloth to drain the water. Then arrange on a plate, sprinkle with Parmesan leaves, add capers, drizzle with lemon and olive oil.

  1. SWEET AND SALTY PEANUT SURPRISE

Mix peanut butter, some chopped peanuts with egg cream, that you steamed with some sugar and then add whipped cream (sweet cream). Mix everything and put in the freezer for a few hours, stirring every hour. You will get peanut ice cream, which you sprinkle lightly with salt leaves and olive oil when serving.

5 minute pizza dough

Ingredients
200 g wheat or spelt flour
200 g yogurt
1/3 tsp salt
3/4 tsp baking powder

Knead the dough with all the ingredients, roll it into a preferred shape.
Top the dough with our Chiavalon passata and the ingredients of choice.
We love a simple caprese, so we used only mozzarella and fresh herbs we had on hand.
Bake on 220°C for 8 minutes and drizzle with your favorite Chiavalon.

Homemade baked potato chips

about 500 g potatoes
3 tbsp Ex Albis extra virgin olive oil
sea salt
powdered garlic
rosemary, dried or fresh

Wash and dried the potatoes.
Slice them equally and quite thin.
Mix them in a bowl with olive oil, a pinch of salt, powdered garlic and some rosemary.
Combine with your hands, then spread the slices on a baking tray lined with parchment paper on a single layer and bake on 200C degrees for about 25 minutes.
Watch them during the process, so they don’t over burn.
Once done, leave them for a few minutes on the tray, then serve with a nice cold glass of beer.

Bruschettas with grilled veggies and Mediterranean dressing

Ingredients
1 zucchini
1 eggplant
1 pepper
1-2 fresh tomatoes
Toasted bread

Ingredients for the dressing
2-4 cloves of garlic
1 tbsp honey
1 tsp dried parsley
5-6 tbsp Chiavalon Istra extra virgin olive oil
1 tbsp mustard

The ingredients can be adjusted accoriding to personal taste.

Grill the veggies on a little bit of olive oil.
Toast the bread.
Prepare the dressing by combining all the ingredients together, adjusting the olive oil according to the rest of the ingredients.
Chop the grilled veggies, place on the bruschettas and drizzle with your strong dressing.
Enjoy!

Dark chocolate lava cake

Ingredients
150 g dark chocolate
150g butter
80 g light Muscovado sugar
3 eggs
1 tbsp unsweetened cocoa powder
40 g wheat/spelt flour
pinch of salt

Toppings
Chiavalon Atilio
Fresh strawberries/other fruit of preference

Melt the butter and chocolate over low heat.
Set aside.
Mix the eggs, salt and sugar until the mixture doubles in size.
Stir in slowly the chocolate, slightly cooled, and cocoa with the flour.
We used 3 ramekins for our cakes that we’ve greased and floured with cocoa powder.
Refrigerate for a few hours or overnight.
Depending on how big are your ramekins and how high do you fill them with the mixture, that’s how your baking time will vary.
Bake on 180°C between 12-15 minutes approximately.
If you bake it a bit longer the chocolate won’t be runny.
The top should be soft but firm before you take them out.
Leave for a few minutes in the ramekin, then flip it onto a plate.

Ps. If you bake them in muffin tins, you’ll need less time, probably around 10 minutes.
